Hello,
I need to create a custom layout for list view, i need to access "event title", "event date" etc. You render all of them using "$cols", where is the variable defined? Or how could i define a new variable "$event-title" ?

You do not need to create a Template override at all.
Just customise:
Joomla! Administrator Area -> Components -> JEvents -> Custom Layouts -> List Row.
